EXTRA VIRGIN OLIVE OIL
L’ORO
COLD-PRESSED OIL
From the olive groves of Buti – Pisa – Tuscany
A THREAD DESCENDED TO MINGLE WITH BREAD
When, in the summer, I opened the window
of the sunlit country house,
a branch of the olive tree would caress me,
stretching into my room, its silver leaves laden with fruit.
Grandmother was proud of that oil.
A thread descended to mingle with bread,
with salt and with homemade love.
I wanted to taste that oil again,
to savor its fragrant flavor,
that gentle and delicate aroma.
In my Tuscan land,
after years of longing,
finally, once again,
here in Serra di Buti, I found it.
M. A. Petrillo
The poet Marina Petrillo (Rome 1986) wrote these verses after tasting the “L’Oro” oil.
Production of the oil
Produced in Buti, within the Cima alla Serra Agriturismo, in the olive grove owned by the Fattoria di Musigliano, Società Agricola Semplice. The olive grove boasts over 2500 plants of various varieties (60% Frantoio, Moraiolo, Leccino, and Pendolino), on ancient terraces, all delimited by perfect dry stone walls. The gaze leads to magical places, rich in history and rural culture.
Harvesting and pressing
The peculiarity of terraced terrain still leads to traditional hand harvesting. In October, during maximum ripeness, the olives are carefully selected and pressed on the same day. Cold pressing preserves nutrients until pressing, ensuring the conservation of nutritional and nutraceutical elements, vital for the organoleptic qualities of extra virgin oil.
Quality and use
The produced oil is an extra virgin oil from the “Monte Pisano,” with golden green tones and a fruity flavor of spiciness, grass, artichoke, and almond. It is stored at 16°C in stainless steel for maximum quality. An excellent product that honors our tables! Great on vegetable appetizers, seafood, grilled fish and meat, bruschetta, or as a rich base for many other diverse dishes.

HISTORY OF BUTI OIL
The Buti oil, always celebrated and considered one of the best in Tuscany, has received important international recognition since the 19th century. Even Gioacchino Rossini, a lover of good food, was a great admirer of Buti oil supplied to him by his friend and sacred music composer Andrea Bernardini. In his correspondence from Paris, Rossini would reserve “a barrel of oil” every year to never run out. The land of Buti still produces the same excellence of oil today!
ITINERARIES
It is worth noting that the olive groves are crossed by typical paths forming a magical route for walks immersed in nature. They wind their way to Monte Serra, outlining the three ancient routes that farmers and locals followed for both work and pleasure.
